Wash and dry the potatoes thoroughly. Place each potato between two wooden chopsticks or the handles of two wooden spoons (this will help prevent cutting all the way through).
Carefully slice the potatoes into thin even slices (about 1/8 inch apart) without cutting all the way through.
In a small mixing bowl, combine the melted butter, minced garlic, paprika, salt, and pepper.
Using a brush or spoon, generously coat each potato with the garlic butter mixture, making sure to get it into the sliced areas.
Sprinkle grated Parmesan cheese evenly over the tops and between the slices of the potatoes.
Transfer the potatoes to a baking sheet lined with parchment paper. Bake in the preheated oven for 45-50 minutes, or until the potatoes are tender and crispy on the edges.
Remove from the oven and sprinkle fresh parsley over the top for garnish. Allow to cool for a few minutes before serving.
Notes
Serve the potatoes on a wooden serving board, with a sprinkle of extra Parmesan on top and a side of sour cream or Greek yogurt for dipping.
